This is a perfect snack! They’re also really great in salads as your protein!

-1 package frozen shelled edamame

-2 tablespoons olive oil

-2 tablespoons of taco seasoning (I just eyeballed this)

-Pinch of salt

-Towel dry the edamame

-Coat with olive oil, taco seasoning, and salt

-Roast on a cookie sheet at 400 degrees for about 20 minutes. Make sure you keep an eye on them! I burnt my first batch.

These are so good! I could easily eat all of them!

-2 cups almond meal

-2 tablespoons ground flax

-1 tsp baking soda

-pinch of salt

-lots of cinnamon, nutmeg, cloves (use however much you’d like)

-1 banana

-1 egg white

-1 tsp vanilla

-cinnamon sugar (just mix a little sugar and cinnamon together of course🙂 )

-Mash banana well, or use a food processor. I just mashed mine and it turned out fine.

-Add vanilla and egg white. Mix.

-Add the rest of the ingredients and mix well.

-Roll the cookie dough balls in cinnamon sugar

-Bake at 350 for 5-6 minutes

-Makes 18 cookies!

“Snow” Day

So today is a “snow” day…

really..? At this point I would’ve rather just gone to class, and not had my test postponed to the week right after springbreak…

Anyway I wanted to post today for a couple reasons. To share my frustration noted above, as well as some awesome stuff i’ve come across.

First things first, I follow Undressed Skeleton. She’s so cute and she has a lot of great healthy recipes. I searched high and low for this so called PB2 she swears by. I finally found it at Whole Foods! (I’ve also gotten in from Mom’s)

It. Is. Awesome.

45 calories & 2.5 grams of fat for two tablespoons…compared to 190 calories and 16 grams of fat for regular peanutbutter.

I will say, the taste is less pungent than that of real peanut butter, but it certainly satisfies my craving. It has the same texture as natural peanut butter. The chocolate one is awesome, too! I’ve been having it for breakfast every day on a piece of toast. I will drizzle a little honey too, the chocolate one doesnt seem to need it though! Pair it with some fruit and it’s the perfect breakfast!

The only downside is that it is really expensive…about $5.99 per jar of it. But you’d pay around that for say, almond butter or sunflower butter.

It actually works as a direct peanut butter substitute in baking too! I really thought it wouldn’t work. I made cookies! I mixed up a cup of PB2, some oats, some almond flour, 2 eggs, 2/3 cup brown sugar, vanilla, baking soda, and a few mini chocolate chips. Basically, I modified this recipe:

  • 1 cup PB2 chocolate
  • 2/3 cup cane brown sugar
  • 1 1/2 teaspoons vanilla
  • 2 large eggs
  • 1 cup rolled oats (gluten-free if desired)
  • 1/2 cup (roughly) almond flour
  • 1 teaspoon baking soda
  • 1/3 cup chocolate chips

350 degrees, 9-10 minutes.

They baked up perfectly.

Be sure to refrigerate the dough for about 10-15 minutes before hand so it firms enough to for cookie dough balls🙂

Now I’ve made some crappy “healthy” cookies. These are actually really good. They have a slight rubbery texture , kind of like when you bake with applesauce, but the flavor is great. I did the math and switching to PB2 saves 50 calories per cookie!

I also just got new colorful mixing bowls so I HAD to bake SOMETHING right?

After I succeeded in that particular baking adventure, I decided to also make some of my favorite chocolate cookie dough that you can literally eat with a spoon…in mass quantities.

I got it from Chocolate Covered Katie’s blog. Definitely check it out she has great ideas/recipes!

It’s made out of 2 cans of rinsed chickpeas, 1 tbs oil, mini chocolate chips, 1/3 cup brown sugar, a little vanilla and salt, and a food processor! Awesome! It actually feels like you’re eating something really terrible for you, and then you realize, wait…this is beans. Genius. Her chocolate chip blondies are awesome too, which is basically the result of baking this concoction.

Next, I found this really awesome stir fry sauce from Trader Joes:

It is fantastic. It really does have a sweet, tropical, yet salty, taste and is perfect for stir fry. The past two weeks i’ve made chicken/shrimp stir fry. So easy! You just heat a little olive oil in a skillet, cook some chicken, add vegetables (TJ’s also a great variety of frozen vegetable medleys…i found a “stir fry” medley and it was perfect!), and rice! Then i just eye ball this Soyaki sauce and mix it all together. It has turned out great both times! It’d be even better if you marinated the chicken/shrimp over night first!

For sweet potato lovers…this is PERFECT!

I never know how long to cook a whole sweet potato, and boiling it takes forever, microwaving it makes for a weird texture…etc.

This is frozen, already mashed, sweet potato!

You take 5 “disks” out of the bag and microwave it for however long it says, I forget. It’s so easy! And the ingredients are simple: sweet potatoes.

This is also awesome for baking. I have made a mean, gluten free, sweet potato pie using this! I’ll hopefully be able to post that recipe later, because it is now one of my all time favorites.

I know this is a long post but I had a lot to say🙂

Pretzel Nutella Brownies

So these stupid things are awesome. I’m almost embarrassed I made them.

I was craving nutella, so i wanted to incorperate it.

I found this recipe. The only thing i did different is i didn’t frost them with extra nutella. And i cut them bite size.

I also made puppy chow which i haven’t made since I was in 3rd grade. Throwback!

Orange Carrot Spice Muffins

I have this problem. When I get bored, I bake. I’ll look through the fridge and think hmm what can I make with that…sad.

Today I wanted to make some kind of carrot muffin. All we had were baby carrots. I don’t know if you’ve ever tried to shred a baby carrot by hand, but it’s near impossible and you feel stupid.

I decided to test out the shredder on my food processor!

I was really surprised at how well it worked. Perfectly shredded carrots!

So I made these cute little muffins:

Once again i’m bad at measuring…so I kinda did this on a whim and guessed on a lot of measurements (i have to be breaking some baking law)

mmmm!!!!

I adapted what I made from here though .

Orange Carrot Spice Muffins

1 3/4 cups ap flour (700)

1 tsp baking powder

1 tsp baking soda

1/8 tsp salt

2 tsp cinnamon

1/4 tsp cloves

1/4 tsp nutmeg

1/4 tsp ground ginger

2 eggs (140)

1/2 cup applesauce (50)

1/2 cup honey + 1 tbs agave nectar (540)

1 tbs orange zest

1 tsp vanilla

1 cup shredded carrots (35)

Mix dry ingredients. Mix wet ingredients. Add wet to dry. Fold in carrots. Bake in muffin tins at 350 for 15-18 minutes.

Easy peasyyyyyyy.

1,465/12 muffins = 122 calories per muffin🙂

 

** because i didn’t use any oil, they stuck to the wrappers pretty bad. Next time i probably won’t use wrappers and just spray the muffin tin instead

Turkey Burger, Mango Salsa, and Sweet Potato Fries!

So I bought a bunch of stuff at Trader Joe’s and I was really in the mood for cooking this afternoon.

I actually got enough sleep last night so I wasn’t super tired after work!

Anyway, would you just…just look at this:

Oh. I rule.

I am so proud of this meal, can I just tell you.

It’s a turkey burger with cheddar cheese, homemade mango salsa, lettuce, whole wheat bun, and a side of sweet potato fries.

Now, when I cook, I tend to not measure anything accurately, but I did pretty well this time I think.

When it comes to making the salsa, it really depends on what you like. My boyfriend made it for me once, and he likes onion, so he put extra. However when I made it, I go easy on the onions. So in this case, measurements are somewhat irrelevant.

All you do is chop up  tomato, onion, mango, and cilantro, add a little salt if you want, and that’s it! It’s super easy and delicious. I’m so glad boyfriend showed me🙂. I let it sit in the fridge for about 30 mintues…I’m a fan of cold salsa.

Next, I made the turkey burgers.

It says on the nutrition facts for the turkey meat that 4 ounces is 190 calories. Assuming there was about a pound (it doesn’t say…), you could get roughly 5 3 ounce burgers out of it, which I did exactly. That means each burger is 143 calories!

I mixed the ground turkey with some garlic, cilantro, yellow onion, salt and pepper and 1 tsp olive oil. I formed 5 patties and wrapped 4 in foil and stuck them in the freezer. You can put whatever you want in your turkey burger! I’ve put chopped up red and yellow pepper in before.

Then I started the sweet potato fries, also very easy! I just cut up a medium sweet potato into wedges (I keep the skin on) and tossed them with 1 tsp olive oil , cinnamon, chili pepper, salt and pepper! Put them in the oven at 450 for about 25 minutes…depending on how soft you want them…and boom. Sweet potato fries!

I cooked the turkey burger in an extra tsp of olive oil so it would get a nice crusty crust.

I toasted the bun in the same pan for like 30 seconds, piled on the lettuce, melted a slice of cheese on the burger, and topped it all of with the mango salsa.

SO EASYYYY AHH

Oh and it was freaking delicious.

Burger (143) + 2 tsp olive oil (80) + cheese (60)* + bun (110) + salsa (virtually nothing just round up if you’re concerned)

= 393!

Sweet potato (100)** + 1 tsp olive oil (40) = 140!

Total= 533

*I used a reduced fat cheddar

** Depends on size of sweet potato, the one I used was relatively small

Delicious. Healthy. That is all.

Fudge Balls!

So I had nothing better to do, so I concocted this creation:

Fudge balls.

I must admit, they’re not my all time favorite, but they work!

 

For a quick snack, and two balls clocking it and only 108 calories, i’d say it’s a pretty cute snack!

 

Fudge Balls

1/4 cup uncooked oats (70)

1 tbs + 1 tsp almond butter (126)

2 tsp cocoa powder (6.5)

1/8 tsp vanilla

Pinch of cinnamon

2 pinches flax meal (20) Probably about a tsp

2 tsp honey (40)

Mix everything together in a bowl forming a sticky dough, and form into balls!

It made about 5 good size balls.

The entire recipe is 262.5…so each ball is 52.5 calories!

If they’re not sweet enough for you, add more honey, or you could use agave. But it’ll add calories , careful!
