Taco Edamame

This is a perfect snack! They’re also really great in salads as your protein!




-1 package frozen shelled edamame

-2 tablespoons olive oil

-2 tablespoons of taco seasoning (I just eyeballed this)

-Pinch of salt

-Towel dry the edamame

-Coat with olive oil, taco seasoning, and salt

-Roast on a cookie sheet at 400 degrees for about 20 minutes. Make sure you keep an eye on them! I burnt my first batch.

These are so good! I could easily eat all of them!


-2 cups almond meal

-2 tablespoons ground flax

-1 tsp baking soda

-pinch of salt

-lots of cinnamon, nutmeg, cloves (use however much you’d like)

-1 banana

-1 egg white

-1 tsp vanilla

-cinnamon sugar (just mix a little sugar and cinnamon together of course 🙂 )

-Mash banana well, or use a food processor. I just mashed mine and it turned out fine.

-Add vanilla and egg white. Mix.

-Add the rest of the ingredients and mix well.

-Roll the cookie dough balls in cinnamon sugar

-Bake at 350 for 5-6 minutes

-Makes 18 cookies!
